01

In one line

A clear golden broth with fresh, flat wavy Sano noodles delivered from Tochigi each morning. Light in appearance, powerful in flavor.

02

Why it tastes so good

The clear broth uses Japanese whole chicken, pork knuckle bones, back bones, pig feet and chicken tail, paired with thick-cut salted pork chashu finished in a sauce replenished for 20 years.

03

The experience

Fresh shungiku adds a gentle bitterness and lift. The result is refined, light and especially popular with women.

The animal ingredients in our broth are Japanese whole chicken, pork knuckle bones, back bones, pig feet and chicken tail. Together they give the clear golden broth a balance of aroma, depth and salt.

02 / NOODLES

Fresh from Tochigi,every morning.

Fresh from Tochigi,every morning.

Sano ramen is known for high-hydration, flat wavy noodles rooted in the traditional aodake bamboo-making method. Their springy, silky texture and natural variations in width and thickness make every bite lively. The waves hold our clear shio broth and carry its dashi flavor. Honmarutei receives these fresh noodles from Tochigi every morning.

Fresh shungiku brings a subtle bitterness and clean lift to the savory broth. Thick-cut salted pork chashu, finished with a sauce replenished for 20 years, is another star of the bowl.
